Green olives stuffed with peppers require a delicate manufacturing process!
They are soaked in large jars with water and salt and, once a day for about twenty days, we stir them carefully to remove the bitterness. Only at this point they are deprived of the stone, put the pepper inside and stored in glass jars where we add extra virgin olive oil and salt.
The EVO oil used as a preservative should not be thrown away, on the contrary! Try it to flavour sauces, meat and salads.
Ingredients: stoned green olives 59%, extra virgin olive oil 41%, pepper paste, salt.
